This trio of smoked fish was a huge hit at our Club’s Mothers Day brunch. It featured Hot Smoked Salmon, Pepper Smoked Sable Fish, and Poached Trout Roulade filled with Smoked Trout Mousse. Each fish had it’s own garnish. The Salmon was served with a new potato, fennel, apple and horseradish salad, the Sable (also known as Black Cod) was served with root vegetable salad with Cava Rose vinaigrette and the Trout was served with cucumber, tomato, caper relish.
